A Gut-Friendly Summer Plate: Easy, Seasonal, and Seriously Delicious

There’s something magical about summer produce – all those colours, flavours, and textures just waiting to be turned into something nourishing. This gut-loving lunch plate has been my go-to lately, made entirely from my weekly veg box. It’s simple to batch-cook, full of variety, and perfect for supporting digestion, energy, and overall gut health.

It’s the kind of meal that feels like summer on a plate, yet takes hardly any time to throw together. Best of all, it keeps beautifully in the fridge for up to three days, making weekday lunches feel effortless and energising.

Simple. Satisfying. Secretly brilliant for your microbiome.

Here’s what’s on the plate:

  1. Potato Salad with Fresh Herbs
    → Packed with resistant starch — a favourite food for your beneficial gut bacteria.
    → Fresh herbs add flavour and plant diversity (your gut loves variety!).
  2. Cooked Beetroot with Apple Cider Vinegar & Spices
    → Supports both gut and liver health.
    → Bright, earthy, and refreshing with a tangy kick.
  3. Ripe Tomato Salad
    → Bursting with antioxidants and anti-inflammatory compounds.
    → Tomatoes are a simple way to nourish your gut lining.
  4. Olive Oil–Dressed Lettuce Leaves + Pumpkin Seeds
    → Crunchy, fibrous, and rich in healthy fats.
    → Pumpkin seeds also deliver zinc and polyphenols = gut gold.
  5. Two to Three Boiled Eggs
    → A satisfying protein source to stabilise blood sugar and support gut lining repair.
  6. A Few Cubes of Cheese (think Babybel or matchstick-sized cheddar)
    → Delicious, and a good source of protein and calcium.
  7. Optional: 1–2 tbsp Sauerkraut or Kimchi
    → For fermented, probiotic-rich goodness that adds diversity to your microbiome.

Batch It: The Prep Guide

This plate is made to be prepped in components. Batch-cook each item, store separately in containers, and mix and match through the week depending on your mood or what your gut’s craving.

The Recipes

Potato Salad with Herbs

  • Any potato works, but new potatoes are delicious right now.
  • Finely chop 2 spring onions.
  • Add fresh herbs: dill, mint, or parsley work beautifully.
  • Optional: dice up a Babybel or a few cheddar matchsticks for added richness.

Dressing:
Mix 1 tbsp mayo + 1 tbsp yoghurt, add lemon juice to loosen, olive oil, and season to taste with salt and pepper.

Cooked Beetroot with a Tangy Kick

  • Trim the leaves without cutting into the root (helps preserve colour).
  • Simmer for 15–20 mins until tender but not mushy.
  • Once cool, rub off the skins easily.

Dressing Options:
Lemon juice, olive oil, salt, pepper. Or try apple cider vinegar, a pinch of sugar, and a splash of your favourite fermented chilli sauce (I used one from Ottolenghi — spicy, zingy perfection).

In-Season Tomato Salad

  • Choose ripe, fragrant tomatoes (smell = flavour!).
  • Slice and dress with salt, pepper, lemon juice or white balsamic (aka “white condiment”), and a good glug of olive oil.

Classic Salad Dressing for Lettuce Leaves

This one’s on repeat in my kitchen – make a big batch and keep it in the fridge.

Basic Ratio: 2–3 parts olive oil : 1 part vinegar
(Adjust to your preference for tang.)

Ingredients:

  • Pinch of salt
  • ½ tsp Dijon or wholegrain mustard
  • ½ tsp honey
  • 1 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil

Method:
Shake everything (except oil) together in a jar. Add oil, shake again. Optional: a splash of water to loosen, or throw in chopped shallots or herbs. Keeps well in the fridge.

Final Tip: Keep It Playful

Switch up your veggies based on what’s in season. Try new herbs. Play with different dressings. This isn’t just lunch — it’s nourishment for your microbiome. A rainbow plate like this is one of the simplest, most joyful ways to support your gut (and your mood) throughout the week.
